- 1 cup all purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup old fashion rolled oats
- 1/4 cup dark brown sugar packed
- 1 stick butter softened
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 pint Melissa's Home Cooking Jam
Preheat oven to 350 degrees. Line an 8 by 8 inch baking dish with aluminum foil, leaving a 2 inch overhang of foil on two sides. Spray foil with cooking spray.
In a large mixing bowl, mix together flour, baking soda, salt, cinnamon, and nutmeg. Stir in oats and brown sugar. Then take your softened butter and work butter into the mixture until evenly moistened.
Take half of the mixture and press into your prepared 8 by 8 pan. Then spread your favorite jam on top. (Hint if too stiff place in microwave for 25 seconds) Leave 1/4 of edges without jam. After spreading the jam now distribute your remaining oatmeal mix and carefully pat on top. Bake in preheated oven for 40 minutes. After removing from oven let cool 7 minutes and cut into desired squares (I cut it into 8 squares). Then let it completely cool before removing from pan. You should have the two extended for sides which you can use to pull them out of pan.
To make these bars with a rich spin, add cream cheese mixture. Beat 8 ounce softened cream cheese, half cup sugar until smooth and creamy. Beat in 1 egg until thoroughly mixed. Spread this mixture on top of your first layer of granola, than your jam, and than the rest of the granola mixture. Follow recipe for cooking instructions.
