Apple Butter Pumpkin Pie

Stop with the boring pumpkin pie for the holidays. This year, give it a twist with this recipe using Melissa’s Home Cooking Apple Butter. Flaky buttery crust with sweet silky smooth filling, and topped with crunchy Streusel topping. Does not take long to put together, and while it is baking, you can be preparing other foods for the family table. Perfect pie for the holidays. Not just your ordinary Pumpkin pie, but Apple Butter Pumpkin Pie. Flaky Buttery Crust with sweet silky smooth filling topped with a streusel topping giving the pie a crunch.

Ingredients
  • 1 can Pumpkin Puree
  • 1 cup Apple Butter
  • 1/4 cup Dark Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/4 tsp Salt
  • 3 eggs beaten
  • 1 cup Evaporated Milk
  • 1 9inch Pie Crust Store bought or homemade
Streusel Topping
  • 3 tbs Butter room temperature
  • 1/2 cup All Purpose Flour
  • 1/4 cup Dark Brown Sugar
  • 1/2 cup Pecans chopped
Instructions
  1. Preheat Oven to 350'

  2. In a large bowl, combine pumpkin puree, apple butter, 1/4 cup brown sugar, cinnamon, nutmeg, and salt. 

  3. Stir in eggs, and evaporated milk. 

  4. Pour batter into a prepared pie shell and bake for 50-60min. 

  5. Prepare and add streusel topping over the top of the pie and bake an additional 15min. Cool, serve, and enjoy

Streusel Topping
  1. Combine all ingredients except pecans for topping in a small bowl. Stir until the mix resembles coarse crumbs. Stir in pecans.

No Sugar Added Monkey Butter Pie

Delicious summer dessert without the sugar. If you do not want the sugar and need a dessert for the next church pot luck or family BBQ, give this recipe a try using only 4 ingredients.

A dessert for those that wish or can not have sugar but still enjoy desserts. Easy recipe to put together for any gathering; Pot Lucks, Church functions, family get together's. Best to make day before to allow to chill and set over night.

Ingredients
  • 1 1/2 cups Sugar Free shortbread cookies crumbs
  • 1 stick butter melted
Pie Filling
  • 8 oz Sugar free cool whip
  • 16 oz No sugar Added Monkey Butter
Instructions
  1. In a food processor, process sugar free cookies into crumbs and measure out 1 and 1/2 cups of crumbs. 

  2. Melt 1 stick of butter. Mix melted butter and cookie crumbs in a bowl. 

  3. Press the cookie crust into the pie plate along the bottom of the pie plate bringing it up a about half way up the edge of the pie plate. 

  4. Bake in a 350' preheated oven for 8 min. Allow to cool on counter 

  5. In a mixing bowl, pour in 16oz no sugar added monkey butter. Fold in 4 oz of sugar free cool whip. Pour in pie plate, spread evenly. 

  6. Top the pie off with the remaining 4oz sugar free cool whip. Set in fridge to chill. 

  7. Optional: Drain a can of pineapple chunks or rings (reserve juice). Slice bananas and soak in the pineapple juiced drained from the pineapple. Decorate the top of your pie with the sliced bananas and pineapple chunks. 

Recipe Notes

Let the pie chill in fridge over night to allow to set. To prevent browning of the bananas , wait to top the pie with bananas and pineapples until your ready to serve.  This recipe can also be made with our sweeten Monkey Butter. 

Baked Salmon with Mango Jam

This simple Baked Salmon recipe is sure to please the family at the dinner table. This recipe features our sweet Mango Jam. Our no sugar added Mango Jam will work just as well giving it bit of a tang. The pepper flakes sprinkled on top gives it just the right amount of kick pairing it perfectly with the mango’s. A tossed green salad would go well with the baked Salmon. Make dinner easy with this recipe.

Ingredients
  • 1/2 cup Melissa's Home Cooking strawberry jam
  • 2 tbsp balsamic vinegar
  • 1 1/2 tsp Dijon mustard
  • 1/4 cup water
  • 1/4 cup canola oil
  • salt and pepper to taste
Instructions
  1. Whisk together jam, vinegar, mustard, and water in a medium bowl until well blended. 

  2. Gradually whisk in oil. Add salt and pepper to taste. 

Blackberry Bourbon Boston Butt

This sweet and savory Boston Butt Pork shoulder is perfect to cook out on the pit on those hot spring/summer days. The time put into this recipe is all worth it when you taste the end result.

Ingredients
  • 1 cup bourbon
  • 1 cup Melissa's Home Cooking Black Berry Jam melt in microwave 20seconds
  • 3/4 cup local honey
  • 2 tbsp black pepper
  • 8-10 pound bone-in Boston butt pork shoulder
  • 1 cup Cajun seasoning
  • 1 cup dark brown sugar firmly packed
  • pecan wood chips soaked in water at least 30 min.
Instructions
  1. In a medium bowl, whisk together bourbon, jam, honey, and pepper. Using meat injector, inject bourbon mixture into pork around the bone throughout the meat. 

  2. In a small bowl, combine Cajun seasoning, and brown sugar. Rub seasoning mixture all over the meat. Cover meat in plastic wrap and refrigerate for 2 hours.

  3. Preheat smoker to 225 degrees. Sprinkle soaked wood chips over coals. Place pork fat side up in an disposable aluminum pan, and place in smoker. Cook, covered, for 7-10 hours or until a meat thermometer (insert in thickest part of meat) reads 190 degrees. Remove from heat, reserve pan drippings, and let stand for 30 minutes. Slice/shred meat, discarding bones. Serve with pan drippings, if desired.

Ingredients
  • 1/2 cup Melissa's Home Cooking Orange Marmalade
  • 2 tsp Dijon Mustard
  • 1 tbsp prepared Horseradish
Instructions
  1. Mix all ingredients in a small bowl.

Ingredients
  • 1 pound Ground Beef
  • 1 Egg
  • 3 tbsp Breadcrumbs or Panko
  • 1/2 tsp Salt
  • 1 1/2 cups Heinz Chili Sauce
  • 1 cup Melissa's Home Cooking Muscadine Grape Jelly or Apple Jelly
  • 3 tsp Brown Spicy Mustard
Instructions
BBQ Meatballs
  1. 1. Preheat oven to 350 degrees.

    2. With your hands or spatula, mix ground beef, egg, breadcrumbs, and salt into a large mixing bowl.

    3. Roll meat mixture into 1 inch balls and place onto a prepared cookie sheet lined with parchment paper. 

    4. Place into preheated oven for 20 minutes or until done.

BBQ Meatball Sauce
  1. 1. Add Heinz Chili Sauce, Melissa's Home Cooking jelly, and spicy brown mustard to a small sauce pan. 

    2. Simmer until hot to the touch. 

    3. Throw cooked meatballs and sauce in a big mixing bowl and toss to coat. Serve and enjoy.
